Thai cuisine is known for its skillful blending of the five fundamental tastes: sweet, spicy, sour, bitter, and salty. Here are some key spices and ingredients of traditional Thai food:

Fresh herbs and spices are essential, with lemongrass, galangal, coriander, and kaffir lime leaves being particularly important.

Chilies were introduced to Thai cooking after contact with Portuguese missionaries and have become integral, contributing to the cuisine's signature heat.

Coconut milk softens the spicy flavors and adds a creamy texture to curries and soups.

Fish sauce (nam pla), shrimp paste, and soy sauce are commonly used to add saltiness.

Together, these ingredients give thai food its traditional and unique flavor that has become famous all over the world. However, it never gets as good as in Thailand itself.

Traditional thai dishes – beyond Pad Thai and red curry

There are range of typical dishes that are well-known also outside of Thailand, but they are of course best savored in local Thai restaurants:

Tom Yum Goong: A hot and sour soup featuring shrimp, mushrooms, tomatoes, lemongrass, galangal, and kaffir lime leaves.

Green Curry (Gaeng Keow Wan): Made with green chili paste, coconut milk, meat (like chicken or beef), eggplant, and basil. It’s aromatic and can range from mildly spicy to very hot.

Som Tam: A spicy green papaya salad that combines all five flavors with green papaya, chilies, garlic, lime juice, fish sauce, and peanuts.

Thai Drunken Noodles: Known as Pad Kee Mao (ผัดขี้เมา) in Thai, this is a popular street food dish characterized by its bold flavors and slightly spicy taste. The name "drunken noodles" is said to come from the idea that these spicy noodles could either cure a hangover or require a high level of spice tolerance that only a drunk person would not mind. However, there's no alcohol in the recipe itself.

Meals are typically shared, with several dishes served at once, allowing diners to enjoy a variety of flavors and textures. Rice, either jasmine or sticky (especially in the north and northeast), is a staple of every meal.
