Terrific experience! The restaurant is in château with nice environment. The staffs are really friendly and hospitable. The sommelier can give really profitable advice and willing to help all the guests fulfilling our experience.
The food is special and creative. The taste is balanced and integrated.

Following my different challenges (trying every Michelin stars in Paris and every 3 stars in France), I’m not trying most of the 2 stars in France and every Michelin Star around Nantes. I went to this one the day after La Marine (3 stars). A tough one to be right after.

So what’s interesting here? In French you would say “c est un malin”, roughly translated it would be : “a smart one”, smart as witty.
Why? 2 examples.
First look at the way the tables are put. The ones back against the wall with a “dome” are dominating, but the ones close to the windows get a better view. Everyone win. Smart move. Everything is like that. From the room to the food.
His cuisine carefully tries to adapt and please the more “traditional “ and even the locals with a strong integration of the local ingredients, but the chef also adds some “sparks”, some edgier elements. Chefs often do that with the appetizers or the starters (it’s easier), but in that case it was also in the main dishes. I had “lard de Colonnata” with the Pigeonneau, which not only made sense but brought a nice soft round touch to it. The raviole was also very fresh and interesting. Nothing shocking, nothing will be out of place. He’ll just try to please you, and then pushes you a little bit in spaces you may not except. But gently.
With care.

The service was very nice. And I have to be very nice with them because it was a Sunday lunch. And it’s getting rarer and rarer to find a one star for a family Sunday lunch, so thanks to them for keeping this tradition alive and for the extra hours it often means. Know that it is appreciated.

One last but obvious point. The location. You’re in the Orangery of a castle. I’ve made several videos, they speak better than words.

It’s a solid one star with quite interesting touches. I’ll go back for sure.

Il y a un an, j’ai eu la chance de vivre une expérience culinaire exceptionnelle dans ce restaurant étoilé à Beaupréau-en-Mauges. Chaque plat raconte une histoire et sublime les produits locaux, dans un cadre à la fois raffiné et accueillant. Voici quelques moments forts de cette expérience gastronomique inoubliable :

🌊 Noix de Saint-Jacques de nos côtes : Une assiette élégante où les saveurs marines se marient avec la douceur du kaki et la finesse de l’extraction de topinambour au miel. Une explosion de saveurs et de textures.

🍄 Velouté automnal et champignons sauvages : Ce plat met à l’honneur les richesses de la saison, avec des chanterelles délicatement travaillées et une émulsion légère qui apporte un équilibre parfait.

🐟 Retour de la criée : Un cabillaud rôti servi avec des légumes croquants et une écume marine, accompagnée d’une déclinaison de champignons aux textures variées. Une véritable ode à l’océan.

🍞 Pain maison et beurre fermier : Un accompagnement simple mais tellement savoureux, symbole de l’attention portée à chaque détail.

A year ago, I had the chance to have an exceptional culinary experience in this Michelin-starred restaurant in Beaupréau-en-Mauges. Each dish tells a story and enhances local products, in a setting that is both refined and welcoming. Here are some highlights of this unforgettable gastronomic experience:

🌊 Scallops from our coasts: An elegant plate where marine flavors combine with the sweetness of persimmon and the finesse of the extraction of Jerusalem artichoke with honey. An explosion of flavors and textures.

🍄 Autumnal velouté and wild mushrooms: This dish highlights the riches of the season, with delicately crafted chanterelles and a light emulsion which provides a perfect balance.

🐟 Return from the auction: Roasted cod served with crunchy vegetables and sea foam, accompanied by a variation of mushrooms with varied textures. A true ode to the ocean.

Salle magnifique à la décoration moderne et soignée. Menu dégustation en 8 services parfait, saveurs originales, cuissons parfaites, bien assaisonné et joli dressage. Mention spéciale au homard sur son lit de crozets un délice ! Service bien rythmé ni trop lent ni trop rapide. Carte des vins au verre peut être un peu limitée même s’il y a largement ce qu’il faut pour s’accorder avec les plats proposés. Nous recommandons sans hésiter le 1825 et ne manquerons pas d’y retourner.

Magnificent room with modern and neat decoration. Perfect 8-course tasting menu, original flavors, perfect cooking, well seasoned and beautiful presentation. Special mention to the lobster on its bed of crozets, a delight! Well-paced service, neither too slow nor too fast. The wine list by the glass can be a little limited even if there is more than enough to pair with the dishes offered. We recommend the 1825 without hesitation and will not hesitate to return.
