Denkushiflori Bangkok is the brilliant collaboration of two culinary giants: Chef Zaiyu Hasegawa of “Den” and Chef Hiroyasu Kawate of “Florilège,” both Tokyo-based and celebrated with two Michelin stars each and spots in the 2024 World’s 50 Best Restaurants. The restaurant’s name reflects their partnership, combining “Den” and “Flori” with “Kushi,” symbolising the skewers that define their innovative cuisine. Leading the kitchen is Chef Shimizu, whose impressive pedigree includes training at three-star Michelin establishments La Maison de Marc Veyrat and l’Arpège. He notably became the first Japanese chef to helm the meat section at l’Arpège under the legendary Alain Passard.

The seasonal menu at Denkushiflori is a seamless fusion of Japanese kushiage skewers and refined French gastronomy, served omakase-style. Each dish showcases precision, creativity, and premium ingredients. Highlights include the Brandade, a creamy cod and potato purée topped with briny salmon roe and sweet uni, and the Pork & Daikon, featuring tender, perfectly fatty pork accented with charcoal leek powder and balanced by sweet radish in a delicate dashi broth - whimsically accompanied by a children's story book about a pig's dangerous encounter with stones. The grilled River Prawn, packed with creamy roe, is paired with Koshihikari rice cooked with whitebait, delivering umami-packed satisfaction.

The restaurant strikes a perfect balance between elegance and casual comfort. Warm lighting, sleek wooden interiors, and an open kitchen create a vibrant yet intimate ambiance. This was one of the most memorable degustation dinners we’ve had recently, all for a surprisingly reasonable S$400 for two, including a bottle of fruity, dry Chablis. Go now before they earn their Michelin star and prices inevitably rise!

A very nice first time try
The pork is very nice with super tenderness and rich flavour
The Toshikoshi soba is of great texture and first time try cold miso soup - very unique
Also love the desserts, diversified and rich
Will for sure come back

First time on 30/08/2024:

We ordered a full set omakase of 7 courses for each and at the end, it is one of best fine diners we have ever experienced. The set was served precisely right time one after one. All dishes were well drafted, dedicate, mouthful and very delicious. Especially, the portions were not too small and tiny like we often have in other fine dinning restaurants. Each dish was big enough for us to have at least 3 - 4 mouthful bites and so could enjoy the flavor at their best.

I also highly recommend the wine/sake pairing package that surprisingly was very good if considering its price that all 6 glasses well matched with each dish. Thank you very much Chef Sisimu Shisizu and team 🙏. We will definitely come back to try your new menu soon.

Second time on 25/09/2024

Came back it again to try their new menu. One again, chef Sisimi Shisizu and team brought me an amazing experience with 7+2 creative, dedicate mouthful delicious courses, added more an amuse in the beginning and a pettit four at the end. Definitely I will come back to eat this menu again before they change the menu after each 3 months.

We went there for lunch but we tried the full set menu (7 course 3,500++)

FOOD - this is fusion/ western food with some twist of japanese flavor. The overall taste is on a sweet side and unfortunately we didnt enjoy it so much.

Service - typical of fine dining restaurant, excellent service as expected.

Parking - erawan hotel

Verdict - we dont enjoy it so much overall. Maybe we were too full and we found many dishes have simolar tone of flavor. Lunch however could be an interesting option (1,900++ for 5 course). We prob wont be back soon.

Reluctantly to try but finally we did and we really enjoyed the food. Our family always love to try French food prepared by Japanese chef. We did try in Paris, Hokkaido, Osaka so on and so forth. We know that Den is famous and really hard to get reservation in Tokyo. Today we had 4 course lunch set, but we had the add on oyster and uni on top of our clay pot rice. Next time will definitely try the full 7 dinner course. Highly recommend.
