This was a great experience without having to leave the city. I love visiting local attractions that isn't just for tourists. This is definitely a hidden gem that everyone should try. The staff was knowledgeable and interesting, they really captured my attention. The tour isn't overly long and you can seat for most of it.
Lastly the bar at the end with live music was the cherry on top. An absolutely lovely experience

If you want a truly unique Scotch experience (with a bit of local Edinburgh history, given their location and historic buildings), definitely put Hollyrood on your list. As newcomers on the scene, I appreciated their unique approach compared to the more established Whiskey houses in the country. They are making some unique offerings by playing with various yeast strains and types of malted barley. You see all of this happening on the tour (we watched one of the distillers pour yeast into a fermentation tank and then talk a bit about the yeast and what it was going to do). Given how new they are, much of what you tasted on the tour was not aged (or not aged very long), but it was still excellent. This included tasting very different whiskeys, with one having a chocolate profile and another having more of a citrusy/tequila profile due to the recipes. Their younger-aged Whiskey’s show a lot of promise as well. They also have a very nice tasting room offering flights of their own Whiskey and other interesting brands. The whole experience was fun and approachable, and I feel I’ll be able to say I tasted their stuff before they became big. Also, don’t sleep on their Gin!

My wife reserved this tour more for our traveling companions, but it turned out to be very, very interesting for everyone. It's an hour long tour with lots of samples and details of the distilling process. Our guide was Roy who did an excellent job. Reservations highly suggested.

Nice and cool Distillery!
I've booked the "Behind the Cask"-Tour. It was very interesting, but 1 hour is a little bit to short. One reason was, that one person had absolut no basic knowledge about whisky at all and of course, he had several questions. After almost 30min in the distillery, we had only another 30min for all the Drams on the table.
In my opinion, "Behind the Cask" is not for beginners. If you have to ask what a Single Malt is and what's the purpouse of filling the spirit in oak casks, then it might be not the right tour to take.

BUT: all in all, it was a great experience with great people! I will visit Holyrood again for sure! 😉👌🏼
