Had my first Bun Cha Chan here that is tasty but too greasy to my taste. It’s a Michelin recommended restaurant, a typical Vietnamese lunch place with plastic tables and outside ‘kitchen’. Go for authentic food, not for the atmosphere.

Theo địa chỉ được Michelin Guide công bố, quán nằm ở phố Mai Hắc Đế, quận Hai Bà Trưng. Quán không có tên riêng, mà chỉ có tấm biển ghi "Bún chả chan" - món chính của quán.

Không gian quán khiêm tốn. Ngay cửa quán là chiếc lò "đỏ lửa" từ 10h tới khoảng 15h, mùi chả băm, chả xương sông tỏa ra thơm nức. Phía trong quán là một quầy bán hàng và 5 - 6 bộ bàn ghế inox khá sạch sẽ.

Khác với bún chả thông thường, bún chả chan kết hợp cùng nước ninh xương nóng hổi.

Mỗi bát sẽ có bún, chả miếng, chả băm, chả cuốn lá xương sông, rau cải, chan đẫm nước dùng. Phần nước dùng có vị ngọt thanh, thơm thơm của hành, mùi, kết hợp cùng vị ngăm ngăm của rau cải, đậm đà của miếng chả xém cạnh.

Chị Nguyễn Thị Hồng, chủ quán chia sẻ: "Món ăn này không xa lạ với người Hà Nam, Bắc Ninh, Bắc Giang nhưng với nhiều khách Hà Nội hay tỉnh, thành khác, khi thấy bún chả chan thì lạ lắm, không biết hương vị ra sao.

Khi ăn thử, họ thích thú, khen món ngon, vừa miệng, rồi truyền tai nhau"

According to the address published by Michelin Guide, the restaurant is located on Mai Hac De street, Hai Ba Trung district. The restaurant does not have its own name, but only has a sign saying "Bun cha chan" - the main dish of the restaurant.

The restaurant space is modest. Right at the door of the shop is a "red fire" oven from 10:00 to about 3:00 p.m., the smell of minced pork and river bone pork radiates. Inside the shop is a sales counter and 5-6 sets of quite clean stainless steel tables and chairs.

Different from regular bun cha, bun cha is combined with hot bone broth.

Each bowl will have vermicelli noodles, pork rolls, minced pork rolls, spring rolls rolled in river bones leaves, vegetables, drenched in broth. The broth has a sweet, fragrant taste of onions and coriander, combined with the dark taste of vegetables and the richness of the grilled pork patties.

Ms. Nguyen Thi Hong, owner of the restaurant, shared: "This dish is not strange to people in Ha Nam, Bac Ninh, and Bac Giang, but for many customers from Hanoi or other provinces and cities, when they see bun cha chan, it is very strange, they don't know. How does it taste?

Tôi tìm đến vì tò mò xem hương vị bún chả chan original thế nào, nhưng tôi đã khá là thất vọng.
Nước chan không khác gì nước luộc rau cải rồi thả bún vào, thịt và chả vào. Hương vị các thành phần cảm thấy rời rạc, không được liên kết với nhau.
Quán nhỏ, ít chỗ ngồi. Chị chủ quán hay cau có, cảm giác không welcome khách lắm.

I came here because I was curious about the taste of Bun Cha original, but I was quite disappointed.
The broth is no different from boiling water with vegetables and then adding vermicelli, meat and spring rolls. The flavors of the ingredients feel disjointed, not linked together.
Small restaurant, few seats. The shop owner often frowns and feels like she doesn't welcome customers very much.
