My favorite tucked away jem near the Arakimatchi park. Master Ishiyama-san provides great seasonal ingredients with fantastic Japanese antique plates and bowls. The selections of Japanese wines and sakes are also amazing.

少し前の秋にお伺いした荒木町たつやさん。
一品目の前菜から好みで、最後までとても美味しかったです。

✔︎前菜　毛蟹、秋田産みず
みずのシャキシャキとした食感や少し粘り感もあって、風味も食感も楽しめる一品でした。

✔︎揚げ物
・京都産賀茂茄子(右)
お出汁で炊いて味を含ませてから揚げてあるので、何もつけなくてもとても美味しかった、、！
・鮪の血合いギシ(左)
血合いと身の際のところで、一番味が濃いところらしい。山椒の香り付きなのがまた良い組み合わせでした。
二口目は手前の昆布塩をつけていただきましたがそれもまた美味でした。

✔︎鱧の沢煮椀
香味のあるお野菜のしゃくしゃく感とお出汁と鱧の組み合わせがとても好きだったなぁ。

✔︎お造り　九絵、鯛、松川鰈
後ろの大葉の若葉や紅たでのピリッと感も少し足しながらいただきました。
あまり飲めないけど日本酒がとても美味しかったです。

✔︎焼き物甘鯛
甘鯛のフワッカリッとした食感と味が素晴らしかったです。
つけ合わせの2種の万願寺唐辛子もまた美味しかったなぁ。
上に乗ってるのは、花椒の若芽のピリッと間　感もちょうど良いアクセントでした。

✔︎熊本産あか牛のリブロース
花びら茸とクレソンの食感や香りも一緒にいただいたけど、これがまた最高でした、、！

✔︎鯛の南蛮漬け
一緒につけたマッシュルームや茗荷も一緒にいただいたけど、こんな南蛮漬け家では作れない。。笑
つけ合わせの紋甲イカや、鯛の卵を出汁で炊いたものもとても美味しかったです。

✔︎おじや2種
1杯目は山椒、2杯目は生姜と柚子のおじやを出してくれました。
お腹いっぱいだったけど美味しくてペロッと食べてしまった。。笑

✔︎デザート
・友達のシャインマスカット
・赤ワインで炊いた無花果
・白ワインのゼリー
・ブルーベリー
・福岡産マスカルポーネ
デザートまで味のバランスが最高！
特にマスカルポーネがフレッシュでほぼクリームでびっくり。
加工所の近くから牛乳を仕入れてるから加熱処理が少なく、それですごくフレッシュなんだそう。
これはなかなか手に入らないだろうなぁ。。凄かったです。

かなり大満足な時間でした！

知り合いの貸切枠でお邪魔したけど、きっと今後自分では行けないだろうから貴重な会でした。

Tatsuya Arakicho, whom I visited a little while ago in the fall.
From the first appetizer to the last, it was very delicious.

✔︎Appetizer Hairy crab, water from Akita
The crunchy texture of the water and the slightly sticky texture made it an enjoyable dish with both flavor and texture.

✔︎Fried food
・Kamo eggplant from Kyoto (right)
It's cooked in dashi soup to incorporate the flavors before being fried, so it was delicious even without adding anything!
・Tuna chiaigishi (left)
It seems that the area between blood and body is where the flavor is strongest. The scent of Japanese pepper was also a good combination.
The second bite was served with kelp salt, which was also delicious.

✔︎Sawani bowl of conger eel
I really liked the crunchiness of the flavorful vegetables and the combination of the dashi soup and conger eel.

✔︎Sashimi: Kue, sea bream, Matsukawa sea bream
I also added a little bit of tang from the young shiso leaves in the back and the red leaves.
I don't drink much, but the sake was very delicious.

✔︎Grilled sweet sea bream
The fluffy texture and taste of the sweet sea bream was amazing.
The two kinds of Manganji chili peppers that came with it were also delicious.
The peppery young buds on top were just the right accent.

✔︎Kumamoto red beef rib roast
I also had the texture and aroma of petal mushrooms and watercress, which was also the best!

✔︎Sea bream pickled in Nanban
I also had the mushrooms and ginger that came with it, but I can't make it at a Nanbanzuke restaurant like this. . lol
The accompaniments, the sea bream squid and sea bream eggs cooked in dashi stock, were also very delicious.

✔︎Ojiya 2 types
The first cup was served with Japanese pepper, and the second with ginger and yuzu.
I was full, but it was delicious and I ate it all. . lol

・Mascarpone from Fukuoka
The balance of flavors is perfect, even the dessert!
I was especially surprised by the freshness of the mascarpone, which was almost creamy.
Because the milk is sourced from near a processing plant, there is less heat treatment, which is why it is so fresh.
This will probably be hard to come by. . It was amazing.

It was a very satisfying time!

I was able to visit a friend of mine for a private time, but I'm sure I won't be able to go there myself in the future, so it was a valuable meeting.
